Mmmmmm….bacon…

Wait…did somebody say bacon!? On a cupcake?! Why yes I did!

Although it may seem like a bit of a strange combination, these cupcakes were to die for!! The cupcakes themselves are Guinness chocolate cake as the base. They were then topped with maple buttercream (made with delicious pure maple syrup). And of course the crowning glory of these cupcakes is candied bacon! (which is surprisingly easy to make!).

To make the candied bacon, coat a few strips of raw bacon with brown sugar until completely covered. Place on a roasting rack over a foil-lined baking sheet to catch the drips. Then bake at 350 for 20 mins. Once cooled, crumble and sprinkle on top of the cupcakes! Super easy!

Needless to say these cupcakes were a MEGA hit at the dinner party that I brought them too and will most definitely be made a few more times in the future!!
